Having setup dozens of gardens for schools and camps, I have seen time after time how children who grow their own food become passionate and enthusiastic about fresh vegetables. Growing gardens with children is a profound way to educate youth about nutrition, agriculture, food, cooking, the environment, natural sciences, math, history, culture and so much more. There is a national movement called Farm-to-School, that aims to connect schools and farms by sourcing local organic food, bringing farmers to schools and taking schools to farms. Many of the schools have gardens at their schools as well. Here on the site we have a number of great books, tools, planting kits and more for children's gardening. Here are some sites with more information about gardening with kids.
