Plant of the Week: Pak Choi Pak Choi is an asian green with leaves that are soft and succulent, with crunchy white or green stalks and young sweet flower shoots. The whole plant is edible. The slight mustard flavor of the young Pak Choi leaves make it a great addition to stir-fries, soups, noodle and meat dishes, and salads. In China, the coarser leaves are often pickled. Pak Choi is a great plant to grow in the Southeast United States during the winter growing season.

BAG IT AND SAVE IT
While leaves may be a great addition to the compost pile, too many leaves can spoil the soup! If you have a yard full of trees and you are raking up more leaves than your compost bin can handle, store excess leaves in plastic bags with holes punched through a few places in your garden shed or by your compost system. These leaves will continue to decompose and can be added to your compost later when your compost needs a boost.
